Steps

Dough Preparation

Add 500 g of flour t55, 300 g of water, 5 g of fresh baker's yeast, 10 g of salt, 10 g of olive oil in the food processor bowl.
Mix knead: 3:00min / 0°C / Speed 1.
Transfer the content of the food processor bowl in a bowl.
Setaside the dough in the bowl cover with towel during 1h 30.

Onion Preparation

Wash the food processor bowl.
Add 200 g of onion, 10 g of olive oil in the food processor bowl.
Mix manual: 15:00min / 120°C / Speed 1.
Add 1 pinch(es) of salt adjust according to the tastes, 1 pinch(es) of pepper adjust according to the tastes in the food processor bowl.
Transfer the content of the food processor bowl in the bowl.

Assembly and Baking

Preheat the oven at 220°C.
Divide the dough in half.
Roll out one piece of dough to fit the bottom of a greased pizza pan.
Spread the cooked onions evenly over the dough.
Sprinkle 250 g of mozzarella on the dough.
Roll out the second piece of dough and place it on top of the cheese.
Sprinkle 250 g of mozzarella on the dough.
Cook in the oven at 220°C.
