- 100 g Almond
- 100 g Shard of roasted pistachio
- 80 g Honey
- 150 g Granulated sugar
- 50 g Water
- 1 Egg
- 100 g Candied fruit
- 100 g Dried fruit
- 1 g Vanilla flavor
Steps
Nougat Base
- Add 100 g of almond, 100 g of shard of roasted pistachio in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 5.
- Transfer the content of the food processor bowl in a bowl.
- Setaside the preparation content at the bowl.
- Wash the food processor bowl.
- Place the whisk.
- Add 80 g of honey, 150 g of granulated sugar, 50 g of water in the food processor bowl.
- Mix manual: 20:00min / 120°C / Speed 2.
- Add 1 egg only white in the food processor bowl.
- Mix manual: 6:00min / 0°C / Speed 3.
- Remove the whisk.
- Transfer the content of the bowl in the food processor bowl.
- Add 100 g of candied fruit, 100 g of dried fruit, 1 g of vanilla flavor in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 3.
Assembly
- Line a loaf tin with Wafer
- Transfer the content of the food processor bowl in a baking dish.
- Cover with another layer of Wafer
- Setaside the preparation content in a freezer during 4h .
Serving
- Remove the Nougat from the freezer and let it sit for a few minutes before slicing
- Cut into slices
- Serve Immediately.
