  • 5 g Fresh baker's yeast
  • 5 g Flour t55

Steps

Dough

  1. Add 300 g of water, 5 g of fresh baker's yeast in the food processor bowl.
  2. Mix manual: 2:00min / 37°C / Speed 2.
  3. Add 500 g of flour t55, 10 g of salt in the food processor bowl.
  4. Mix knead: 6:00min / 0°C / Speed 1.

Proofing

  1. Transfer the content of the food processor bowl in a mixing bowl.
  2. Form a ball.
  3. Lightly oil the mixing bowl.
  4. Setaside the dough in the mixing bowl cover with towel during 1h .

Baking

  1. Preheat the oven at 220°C.
  2. Place the dough on a lightly floured surface.
  3. Shape it into a round loaf.
  4. Place the content of the dough on a baking tray to be covered in baking paper before.
  5. Sprinkle 5 g of flour t55 on the dough.
  6. Score the top of the loaf with a sharp knife.
  7. Cook in the oven at 220°C.
  8. Bake for 30-35 minutes, or until golden brown and the internal temperature reaches 93°C (200°F).
  9. Let the loaf cool completely on a wire rack before slicing and serving.
  10. Serve Immediately.
