  • 20 g Water
  • 120 g Butter
  • 120 g Flour t55
  • 2 Eggs
  • 80 g Honey
  • 50 g Granulated sugar
  • 1 g Orange zest
  • 4 g Baking powder
  • 20 g Icing sugar

Steps

Saffron Infusion

  1. Add 1 pinch(es) of saffron in a bowl.
  2. Add 20 g of water in the bowl.
  3. Setaside the preparation content.

Madeleine Batter

  1. Add 120 g of butter in the food processor bowl.
  2. Mix manual: 3:00min / 60°C / Speed 2.
  3. Add 120 g of flour t55, 2 eggs, 80 g of honey, 50 g of granulated sugar, 1 g of orange zest in the food processor bowl.
  4. Transfer the content of the bowl in the food processor bowl.
  5. Add 4 g of baking powder in the food processor bowl.
  6. Mix manual: 20sec / 0°C / Speed 4.
  7. Scrape down the sides of the bowl with a spatula.
  8. Mix manual: 10sec / 0°C / Speed 4.
  9. Transfer the content of the food processor bowl in a mixing bowl.
  10. Cover with plastic wrap.
  11. Setaside the preparation content in a fridge during 1h .

Baking

  1. Preheat the oven at 200°C.
  2. Grease a madeleine pan with melted butter or cooking spray.
  3. Fill each madeleine mold about three-quarters full with the chilled batter.
  4. Cook in the oven at 200°C during 12min.
  5. Bake for 12-15 minutes, or until the madeleines are golden brown around the edges and a toothpick inserted into the center comes out clean.

Finishing

  1. Let the madeleines cool slightly in the pan before transferring them to a wire rack to cool completely.
  2. Sprinkle 20 g of icing sugar on the preparation content.
  3. Serve Immediately.
