- 250 g Puff pastry
- 4 White sugar doughs
- 500 g Milk
- 3 Eggs
- 80 g Granulated sugar
- 1 Teaspoon(s) Vanilla extract
- 40 g Flour t55
Steps
Pastry
- Add 250 g of puff pastry on a workplan.
- Roll out the puff pastry thinly.
- Cut out four circles using a pastry cutter or knife.
- Place 4 white sugar doughs in the ramekin.
- Preheat the oven at 180°C.
- Cook in the oven at 180°C during 15min.
- Setaside the dough let cool.
Custard Cream
- Add 500 g of milk, 3 eggs, 80 g of granulated sugar, 1 teaspoon(s) of vanilla extract, 40 g of flour t55 in the food processor bowl.
- Mix manual: 8:00min / 90°C / Speed 4.
- Setaside the preparation content let cool during 10min.
Assembly
- Transfer the content of the preparation content in the ramekin.
- Cook in the oven at 180°C during 10min.
- Setaside the preparation content let cool.
- Serve Cold.
