Dough

  1. Add 150 g of water, 10 g of fresh baker's yeast in the food processor bowl.
  2. Mix manual: 2:00min / 37°C / Speed 2.
  3. Add 250 g of flour t55, 20 g of olive oil, 50 g of parmesan cheese, 2 teaspoon(s) of salt in the food processor bowl.
  4. Mix knead: 3:00min / 0°C / Speed 1.
  5. Transfer the content of the food processor bowl in a bowl.
  6. Setaside the dough on a workplan cover with towel during 1h .

Shaping & Flavoring

  1. Preheat the oven at 200°C.
  2. Line a baking sheet with baking paper.
  3. Chop, and add 10 g of fresh basil on a cutting board.
  4. Setaside the preparation content on the workplan.
  5. Divide the dough into small portions.
  6. Roll each portion into a thin cylinder, about 1 cm in diameter and 10-12 cm long.
