- 500 g Beef shank
- 1 Onion
- 5 Cloves
- 1 Cinnamon stick
- 1 Star anise
- 20 g Ginger
- 20 g Salt
- 10 g Granulated sugar
- 5 g Nuoc-mâm sauce
- 250 g Rice vermicelli
- 100 g Beansprout
- 50 g Fresh basil
- 30 g Fresh chive
- 1 Red pepper

Preparation
- Add 1500 g of water, 500 g of beef shank, 1 onion, 5 cloves, 1 cinnamon stick, 1 star anise, 20 g of ginger, 20 g of salt, 10 g of granulated sugar, 5 g of nuoc-mâm sauce in the food processor bowl.
- Mix manual: 60:00min / 100°C / Speed 1.
Cooking the Noodles
- Remove the beef from the broth and set aside.
- Setaside the bowl beside a workplan.
- Strain the broth.
- Rinse the food processor bowl.
- Return the broth to the Thermomix bowl.
- Add 250 g of rice vermicelli in the food processor bowl.
- Cook according to package instructions. Adjust time if needed.
Serving
- Divide the Rice Vermicelli and broth into bowls.
- Thinly slice the cooked beef.
- Add the beef to the bowls.
- Add 100 g of beansprout, 50 g of fresh basil, 30 g of fresh chive, 1 red pepper on the bowl.
- Serve Hot.
