  • 20 g Granulated sugar
  • 20 g Butter
  • 5 g Salt
  • 250 g Flour t55
  • 15 g White sesame seed

Steps

Dough

  1. Add 120 g of water, 10 g of fresh baker's yeast in the food processor bowl.
  2. Mix manual: 2:00min / 37°C / Speed 2.
  3. Add 20 g of granulated sugar, 20 g of butter, 5 g of salt, 250 g of flour t55 in the food processor bowl.
  4. Mix knead: 3:00min / 0°C / Speed 1.
  5. Transfer the content of the food processor bowl in a mixing bowl.
  6. Setaside the dough in a bowl cover with towel during 1h .

Shaping and Baking

  1. Preheat the oven at 220°C.
  2. Line a baking sheet with baking paper.
  3. Divide the dough into 8 equal portions.
  4. Roll each portion into a long strand, about 60-70 cm long.
  5. Shape each strand into a pretzel shape.
  6. Place the content of the dough on a baking tray.
  7. Brush 20 g of water on the dough.
  8. Sprinkle 15 g of white sesame seed on the dough.

Baking

  1. Cook in the oven at 220°C during 12min.
  2. Transfer the content of the baking tray in a strainer let cool.
  3. Serve Immediately.
