- 2 Shallots
- 1 Onion
- 2 Cloves of garlic
- 20 g Olive oil
- 1 Leek
- 2 Carrots
- 400 g Tomato peeled in juice
- 2 Celery branches
- 1 kg Water
- 1 Cube of fish stock
- 2 Pinch(es) Cayenne pepper
- 1 Bouquet garni
- 1 Pinch(es) Salt
- 1 Pinch(es) Pepper
- 500 g Fish fillet
Steps
- Mince, and add 2 shallots, 1 onion in the food processor bowl.
- Add 2 cloves of garlic in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 5.
- Add 20 g of olive oil in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 2.
- Mince, and add 1 leek only white in the food processor bowl.
- Cut into dices, and add 2 carrots in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 5.
- Mix manual: 5:00min / 120°C / Speed 1.
- Add 400 g of tomato peeled in juice, 2 celery branches, 1 kg of water, 1 cube of fish stock, 2 pinch(es) of cayenne pepper adjust according to the tastes, 1 bouquet garni in the food processor bowl.
- Add 1 pinch(es) of salt in a mixing bowl.
- Add 1 pinch(es) of pepper in the mixing bowl.
- Mix manual: 20:00min / 120°C / Speed 1.
- Cut in pieces, and add 500 g of fish fillet in the food processor bowl.
- Mix manual: 5:00min / 120°C / Speed 1.
- Remove the bouquet garni.
- Mix manual: 30sec / 0°C / Speed 10.
- Serve hot with toasted bread or croutons.
