- 15 g Olive oil
- 60 g Butter
- 300 g Risotto special rice
- 100 g White wine
- 750 g Vegetable broth
- 2 Pinch(es) Salt
- 2 Pinch(es) Pepper
- 100 g Gorgonzola
- 50 g Parmesan cheese
- 250 g Button mushroom
Steps
Sautéing the base
- Cut in four, and add 200 g of onion in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 5. Scrape the sides of the bowl with the spatula
- Add 15 g of olive oil, 30 g of butter in the food processor bowl.
- Mix manual: 3:00min / 120°C / Speed 1.
Cooking the risotto
- Add 300 g of risotto special rice in the food processor bowl.
- Mix manual: 3:00min / 120°C / Speed 1 in inverse.
- Add 100 g of white wine in the food processor bowl.
- Mix manual: 1:00min / 100°C / Speed 1. Filler cap open
- Add 750 g of vegetable broth, 1 pinch(es) of salt, 1 pinch(es) of pepper in the food processor bowl.
- Mix manual: 17:00min / 98°C / Speed 1 in inverse.
- Cut into small pieces, and add 100 g of gorgonzola in the food processor bowl.
- Grate, and add 50 g of parmesan cheese in the food processor bowl.
- Mix manual: 2:00min / 0°C / Speed 2.
Mushrooms
- Sliced, and add 250 g of button mushroom in a pan.
- Add 30 g of butter in the pan.
- Cook in the pan and turn as soon as the face is golden.
- Add 1 pinch(es) of salt, 1 pinch(es) of pepper in the pan.
Final Presentation
