Dough

  1. Preheat the oven at 180°C.
  2. Add 100 g of blanched almond in the food processor bowl.
  3. Mix manual: 10sec / 0°C / Speed 10.
  4. Transfer the content of the food processor bowl in a bowl.
  5. Wash the food processor bowl.
  6. Place the whisk.
  7. Add 100 g of butter, 100 g of icing sugar in the food processor bowl.
  8. Mix manual: 2:00min / 0°C / Speed 3.
  9. Add 100 g of flour t55, 100 g of powdered almond, 4 eggs only white, 1 vanilla flavor, 1 pinch(es) of salt in the food processor bowl.
  10. Mix manual: 1:00min / 0°C / Speed 3.
  11. Remove the whisk.
  12. Transfer the content of the food processor bowl in a piping bag.

Baking

  1. Line a baking sheet with parchment paper.
  2. Pipe thin lines of dough, about 8 cm long, onto the prepared baking sheet, leaving space between each line.
  3. Cook in the oven at 180°C during 5min.
  4. Remove from the oven and immediately, while still hot, roll each strip around a thin object (like a chopstick or the handle of a wooden spoon) to form a cigar shape. Work quickly, as they harden fast.
  5. Let cool completely on a wire rack.

Final Presentation

  1. Serve Immediately.
  2. Arrange the Russian Cigars on a serving plate.
