Ingredients
- 3 Eggs
- 80 g Granulated sugar
- 1 Teaspoon(s) Vanilla extract
- 80 g Flour t55
- 250 g Mascarpone
- 200 g Whipping cream
- 20 g Dark rum
- 1 g Chocolate vermicelli
- 1 Chocolate coffee bean
- 1 g Chocolate powder
Steps
Cake Batter
- Preheat the oven at 180°C.
- Line a baking sheet with baking paper.
- Add 3 eggs, 80 g of granulated sugar in the food processor bowl.
- Mix manual: 6:00min / 37°C / Speed 4.
- Add 1 teaspoon(s) of vanilla extract, 80 g of flour t55 in the food processor bowl.
- Mix manual: 6sec / 0°C / Speed 3.
- Pour the content of the food processor bowl on a baking tray.
- Spread evenly.
- Cook in the oven during 12min.
- Check for doneness after 12 minutes.
- Bake for 15 minutes, or until golden brown.
- Let cool slightly, then roll the cake with the baking paper.
- Setaside the dough let cool.
Cream Filling
- Prepare Coffee and let it cool.
- Add 250 g of mascarpone, 200 g of whipping cream, 20 g of dark rum in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl in a container.
- Wash the food processor bowl.
Final Decoration
- Open the cake roll carefully.
- Spread half the coffee on the inside surface.
- Spread the mascarpone mixture evenly over the cake.
- Roll the cake back up tightly.
- Spread the remaining coffee on the outside surface.
- Sprinkle 1 g of chocolate vermicelli on a preparation content.
- Pipe five small mounds of the remaining Cream Filling along the top of the Yule Log.
- Place 1 chocolate coffee bean on the preparation content.
- Setaside the preparation content in a fridge during 2h .
- Sprinkle 1 g of chocolate powder on the preparation content.
- Serve Cold.
