Ingredients
- 250 g Flour t55
- 125 g Salted butter
- 125 g Granulated sugar
- 1 Pinch(es) Salt
- 3 Eggs
- 20 g Water
- 50 g Dried bean
- 200 g Whipping cream
- 1 g Vanilla extract
- 500 g Fig
Steps
Shortcrust Pastry
- Add 250 g of flour t55, 125 g of salted butter, 50 g of granulated sugar, 1 pinch(es) of salt in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 5.
- Add 1 egg, 20 g of water in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl on a workplan.
- Wrap it in plastic wrap.
- Setaside the dough in a fridge during 30min.
Blind Bake the Crust
- Preheat the oven at 180°C.
- Roll out the chilled Shortcrust pastry on a lightly floured surface.
- Trim the edges.
- Prick the bottom of the pastry with a fork.
- Place the content of the baking paper on the dough.
- Add 50 g of dried bean in a baking paper.
- Cook in the oven at 180°C.
- Remove the content of the dough in the baking paper.
- Cook in the oven at 180°C.
- Remove from oven and let cool slightly.
Creamy Filling
- Add 200 g of whipping cream, 75 g of granulated sugar, 2 eggs, 1 g of vanilla extract in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
Assemble and Bake the Tart
- Pour the content of the food processor bowl in the dough.
- Place 500 g of fig on a preparation content.
- Cook in the oven at 180°C.
Cool and Serve
- Remove the Fig Tart from the oven and let it cool completely on a wire rack before serving.
- Serve Cold.
