  • 250 g Flour t55
  • 125 g Salted butter
  • 125 g Granulated sugar
  • 1 Pinch(es) Salt
  • 3 Eggs
  • 20 g Water
  • 50 g Dried bean
  • 200 g Whipping cream
  • 1 g Vanilla extract
  • 500 g Fig

Steps

Shortcrust Pastry

  1. Add 250 g of flour t55, 125 g of salted butter, 50 g of granulated sugar, 1 pinch(es) of salt in the food processor bowl.
  2. Mix manual: 20sec / 0°C / Speed 5.
  3. Add 1 egg, 20 g of water in the food processor bowl.
  4. Mix manual: 20sec / 0°C / Speed 4.
  5. Transfer the content of the food processor bowl on a workplan.
  6. Wrap it in plastic wrap.
  7. Setaside the dough in a fridge during 30min.

Blind Bake the Crust

  1. Preheat the oven at 180°C.
  2. Roll out the chilled Shortcrust pastry on a lightly floured surface.
  3. Trim the edges.
  4. Prick the bottom of the pastry with a fork.
  5. Place the content of the baking paper on the dough.
  6. Add 50 g of dried bean in a baking paper.
  7. Cook in the oven at 180°C.
  8. Remove the content of the dough in the baking paper.
  9. Cook in the oven at 180°C.
  10. Remove from oven and let cool slightly.

Creamy Filling

  1. Add 200 g of whipping cream, 75 g of granulated sugar, 2 eggs, 1 g of vanilla extract in the food processor bowl.
  2. Mix manual: 20sec / 0°C / Speed 4.

Assemble and Bake the Tart

  1. Pour the content of the food processor bowl in the dough.
  2. Place 500 g of fig on a preparation content.
  3. Cook in the oven at 180°C.

Cool and Serve

  1. Remove the Fig Tart from the oven and let it cool completely on a wire rack before serving.
  2. Serve Cold.
