Ingredients
- 75 g Oatmeal flake
- 150 g Flour t55
- 2 g Baking soda
- 1 g Salt
- 85 g Salted butter
- 75 g Granulated sugar
- 1 Egg
- 1 Teaspoon(s) Vanilla extract
- 200 g Dark chocolate
- 200 g Whipping cream
- 100 g White chocolate
- 2 Eyes in sugar paste
Steps
Cookie Dough
- Add 75 g of oatmeal flake in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 10.
- Add 150 g of flour t55, 2 g of baking soda, 1 g of salt, 85 g of salted butter in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 4.
- Add 75 g of granulated sugar, 1 egg, 1 teaspoon(s) of vanilla extract in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl on a cling film warp in cling wrap.
- Setaside the dough during 30min.
- Preheat the oven at 175°C.
- Roll out the dough to about 5mm thickness.
- Cut out circles using a cookie cutter.
- Place the cookies on a baking sheet lined with baking paper.
- Cook in the oven at 175°C during 10min.
- Let the cookies cool completely on a wire rack.
Chocolate Cream Filling
- Add 200 g of dark chocolate in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 8.
- Add 200 g of whipping cream in the food processor bowl.
- Mix manual: 3:00min / 50°C / Speed 2.
- Mix manual: 20sec / 0°C / Speed 4.
- Setaside the preparation content let cool.
Decoration
- Wash the food processor bowl.
- Add 100 g of white chocolate in the food processor bowl.
- Mix manual: 3:00min / 50°C / Speed 2.
- Transfer the content of the food processor bowl in a piping bag.
- Cut a very small corner off the piping bag.
- Pipe small dots of white chocolate around the edge of half of the cookies to create the teeth.
- Setaside the preparation content on a plate let cool.
- Spread the chocolate cream filling generously on the flat side of the remaining cookies.
- Place a decorated cookie on top of each filled cookie to create a sandwich.
- Place 2 eyes in sugar paste on the plate.
- Serve Immediately.
