  • 75 g Oatmeal flake
  • 150 g Flour t55
  • 2 g Baking soda
  • 1 g Salt
  • 85 g Salted butter
  • 75 g Granulated sugar
  • 1 Egg
  • 1 Teaspoon(s) Vanilla extract
  • 200 g Dark chocolate
  • 200 g Whipping cream
  • 100 g White chocolate
  • 2 Eyes in sugar paste

Steps

Cookie Dough

  1. Add 75 g of oatmeal flake in the food processor bowl.
  2. Mix manual: 10sec / 0°C / Speed 10.
  3. Add 150 g of flour t55, 2 g of baking soda, 1 g of salt, 85 g of salted butter in the food processor bowl.
  4. Mix manual: 10sec / 0°C / Speed 4.
  5. Add 75 g of granulated sugar, 1 egg, 1 teaspoon(s) of vanilla extract in the food processor bowl.
  6. Mix manual: 20sec / 0°C / Speed 4.
  7. Transfer the content of the food processor bowl on a cling film warp in cling wrap.
  8. Setaside the dough during 30min.
  9. Preheat the oven at 175°C.
  10. Roll out the dough to about 5mm thickness.
  11. Cut out circles using a cookie cutter.
  12. Place the cookies on a baking sheet lined with baking paper.
  13. Cook in the oven at 175°C during 10min.
  14. Let the cookies cool completely on a wire rack.

Chocolate Cream Filling

  1. Add 200 g of dark chocolate in the food processor bowl.
  2. Mix manual: 10sec / 0°C / Speed 8.
  3. Add 200 g of whipping cream in the food processor bowl.
  4. Mix manual: 3:00min / 50°C / Speed 2.
  5. Mix manual: 20sec / 0°C / Speed 4.
  6. Setaside the preparation content let cool.

Decoration

  1. Wash the food processor bowl.
  2. Add 100 g of white chocolate in the food processor bowl.
  3. Mix manual: 3:00min / 50°C / Speed 2.
  4. Transfer the content of the food processor bowl in a piping bag.
  5. Cut a very small corner off the piping bag.
  6. Pipe small dots of white chocolate around the edge of half of the cookies to create the teeth.
  7. Setaside the preparation content on a plate let cool.
  8. Spread the chocolate cream filling generously on the flat side of the remaining cookies.
  9. Place a decorated cookie on top of each filled cookie to create a sandwich.
  10. Place 2 eyes in sugar paste on the plate.
  11. Serve Immediately.
