  • 250 g Flour
  • 125 g Salted butter
  • 70 g Icing sugar
  • 60 g Milk
  • 2 Teaspoon(s) Orange blossom water
  • 200 g Pitted date
  • 35 g Butter
  • 2 Teaspoon(s) Cinnamon powder
  • 1 Teaspoon(s) Ground cardamom
  • 1 Teaspoon(s) Clove
  • 150 g Mix of nuts

Steps

Dough

  1. Add 250 g of flour in the food processor bowl.
  2. Cut into cubes, and add 125 g of salted butter in the food processor bowl.
  3. Add 50 g of icing sugar in the food processor bowl.
  4. Mix manual: 20sec / 0°C / Speed 5.
  5. Add 60 g of milk, 1 teaspoon(s) of orange blossom water in the food processor bowl.
  6. Mix manual: 20sec / 0°C / Speed 4.
  7. Transfer the content of the food processor bowl on a plate warp in cling wrap.
  8. Flatten the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  9. Refrigerate for at least 30 minutes

Date Filling

  1. Rinse the food processor bowl.
  2. Add 200 g of pitted date in the food processor bowl.
  3. Mix chop: 10sec / 0°C / Speed 7.
  4. Add 15 g of butter, 1 teaspoon(s) of cinnamon powder, 1 teaspoon(s) of ground cardamom, 1 teaspoon(s) of clove in the food processor bowl.
  5. Mix manual: 5:00min / 80°C / Speed 2. Scrape the sides of the bowl with the spatula
  6. Setaside the preparation content in a bowl let cool.

Walnut Filling

  1. Rinse the food processor bowl.
  2. Add 150 g of mix of nuts in the food processor bowl.
  3. Mix chop: 10sec / 0°C / Speed 7.
  4. Add 20 g of icing sugar, 20 g of butter, 1 teaspoon(s) of cinnamon powder, 1 teaspoon(s) of orange blossom water in the food processor bowl.
  5. Mix manual: 20sec / 0°C / Speed 3.
  6. Setaside the preparation content in the bowl let cool.

Assembling and Baking

  1. Preheat the oven at 180°C.
  2. Divide the dough into small balls, about 25 grams each.
  3. Press a well in each ball and fill with either the date filling or the walnut filling.
  4. Close the dough around the filling, shaping it into a dome or using a Maamoul mold
  5. Place the content of the preparation content on a baking tray to be covered in baking paper before.
  6. Cook in the oven at 180°C during 15min to 20min.
  7. Let the Maamoul cool on a wire rack

Garnish

  1. Garnish with extra Walnuts, Pistachios and Icing Sugar before serving
  2. Serve Immediately.
