Ingredients
- 250 g Flour
- 125 g Salted butter
- 70 g Icing sugar
- 60 g Milk
- 2 Teaspoon(s) Orange blossom water
- 200 g Pitted date
- 35 g Butter
- 2 Teaspoon(s) Cinnamon powder
- 1 Teaspoon(s) Ground cardamom
- 1 Teaspoon(s) Clove
- 150 g Mix of nuts
Steps
Dough
- Add 250 g of flour in the food processor bowl.
- Cut into cubes, and add 125 g of salted butter in the food processor bowl.
- Add 50 g of icing sugar in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 5.
- Add 60 g of milk, 1 teaspoon(s) of orange blossom water in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl on a plate warp in cling wrap.
- Flatten the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Refrigerate for at least 30 minutes
Date Filling
- Rinse the food processor bowl.
- Add 200 g of pitted date in the food processor bowl.
- Mix chop: 10sec / 0°C / Speed 7.
- Add 15 g of butter, 1 teaspoon(s) of cinnamon powder, 1 teaspoon(s) of ground cardamom, 1 teaspoon(s) of clove in the food processor bowl.
- Mix manual: 5:00min / 80°C / Speed 2. Scrape the sides of the bowl with the spatula
- Setaside the preparation content in a bowl let cool.
Walnut Filling
- Rinse the food processor bowl.
- Add 150 g of mix of nuts in the food processor bowl.
- Mix chop: 10sec / 0°C / Speed 7.
- Add 20 g of icing sugar, 20 g of butter, 1 teaspoon(s) of cinnamon powder, 1 teaspoon(s) of orange blossom water in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 3.
- Setaside the preparation content in the bowl let cool.
Assembling and Baking
- Preheat the oven at 180°C.
- Divide the dough into small balls, about 25 grams each.
- Press a well in each ball and fill with either the date filling or the walnut filling.
- Close the dough around the filling, shaping it into a dome or using a Maamoul mold
- Place the content of the preparation content on a baking tray to be covered in baking paper before.
- Cook in the oven at 180°C during 15min to 20min.
- Let the Maamoul cool on a wire rack
Garnish
- Garnish with extra Walnuts, Pistachios and Icing Sugar before serving
- Serve Immediately.
