- 50 g Butter
- 120 g Milk
- 2 Pinch(es) Salt
- 2 Pinch(es) Pepper
- 80 g Flour
- 1 Egg
- 200 g Tomato puree
- 200 g Diced tomato pulp
- 10 g Fresh parsley
Steps
Quenelles
- Add 50 g of butter, 120 g of milk, 1 pinch(es) of salt, 1 pinch(es) of pepper in the food processor bowl.
- Mix manual: 5:00min / 100°C / Speed 1.
- Add 80 g of flour, 1 egg in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Setaside the preparation content during 10min.
- Shape small quenelles using two spoons.
- Cook the dumplings in simmering water until they float to the surface. Remove and drain.
Tomato Sauce
- Wash the food processor bowl.
- Add 200 g of tomato puree, 200 g of diced tomato pulp, 1 pinch(es) of salt, 1 pinch(es) of pepper in the food processor bowl.
- Mix manual: 10:00min / 90°C / Speed 2.
- Chop, and add 10 g of fresh parsley in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 3.
Quenelles
- Pour the Tomato Sauce over the cooked quenelles and serve immediately.
Final Preparation
- Serve Hot.
