Ingredients
- 500 g Strawberry
- 15 g Lemon juice
- 80 g Icing sugar
- 150 g Raffaello
- 200 g Milk
- 200 g Whipping cream
- 10 Pinch(es) Silver sugar pearl
Steps
Strawberry Base
- Add 500 g of strawberry in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 6.
- Add 15 g of lemon juice, 80 g of icing sugar in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl in a bowl.
- Setaside the preparation content.
Raffaello Infusion
- Wash the food processor bowl.
- Add 150 g of raffaello in the food processor bowl.
- Mix chop: 15sec / 0°C / Speed 8.
- Add 200 g of milk, 200 g of whipping cream in the food processor bowl.
- Mix manual: 5:00min / 80°C / Speed 2.
- Setaside the preparation content let cool.
Ice Cream Finalization
- Transfer the content of the bowl in the food processor bowl.
- Transfer the content of the food processor bowl in a container.
- Freeze for at least 4 hours. Stir every hour to break up ice crystals.
Garnish
- Scoop the ice cream into balls and arrange them on top of each other.
- Sprinkle 10 pinch(es) of silver sugar pearl on the preparation content.
- Serve Immediately.
