  • 125 g Salted butter
  • 400 g Granulated sugar
  • 7 Eggs
  • 25 g Water
  • 4 Lemons
  • 100 g Butter
  • 1 Teaspoon(s) Lemon juice

Steps

Shortcrust Pastry

  1. Add 250 g of flour t55, 125 g of salted butter, 50 g of granulated sugar in the food processor bowl.
  2. Mix manual: 20sec / 0°C / Speed 5.
  3. Add 1 egg, 25 g of water in the food processor bowl.
  4. Mix manual: 20sec / 0°C / Speed 5.
  5. Transfer the content of the food processor bowl on a workplan.
  6. Flatten the dough into a disc and wrap in cling film.
  7. Setaside the dough in a fridge during 30min.
  8. Preheat the oven at 180°C.
  9. Roll out the pastry on a lightly floured surface.
  10. Line a tart tin (approx. 23cm diameter).
  11. Prick the base of the pastry with a fork.
  12. Cook in the oven at 180°C during 20min.
  13. Remove the baking beans/paper.
  14. Cook in the oven at 180°C during 5min.
  15. Setaside the preparation content on the workplan let cool.

Lemon Cream

  1. Wash the food processor bowl.
  2. Add 200 g of granulated sugar, 2 lemons only the yellow in the food processor bowl.
  3. Mix manual: 10sec / 0°C / Speed 10.
  4. Add 2 lemons, 3 eggs, 100 g of butter in the food processor bowl.
  5. Mix manual: 12:00min / 80°C / Speed 4.
  6. Pour the content of the food processor bowl in the preparation content.
  7. Pour the Lemon Cream into the cooled tart shell and spread evenly.

Meringue

  1. Wash the food processor bowl.
  2. Place the whisk.
  3. Add 3 eggs only white in the food processor bowl.
  4. Mix manual: 3:00min / 0°C / Speed 4.
  5. Add 150 g of granulated sugar gradually, 1 teaspoon(s) of lemon juice in the food processor bowl.
  6. Mix manual: 5:00min / 0°C / Speed 4.
  7. Transfer the content of the food processor bowl on the preparation content.
  8. Spoon or pipe the meringue onto the Lemon Cream, creating peaks.
  9. Use a kitchen blowtorch to lightly brown the meringue peaks, or place the tart under a hot grill for a short time, watching carefully to avoid burning.
  10. Allow to cool slightly before serving.
  11. Serve Cold.
