Ingredients
- 250 g Flour t55
- 125 g Salted butter
- 400 g Granulated sugar
- 7 Eggs
- 25 g Water
- 4 Lemons
- 100 g Butter
- 1 Teaspoon(s) Lemon juice
Steps
Shortcrust Pastry
- Add 250 g of flour t55, 125 g of salted butter, 50 g of granulated sugar in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 5.
- Add 1 egg, 25 g of water in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 5.
- Transfer the content of the food processor bowl on a workplan.
- Flatten the dough into a disc and wrap in cling film.
- Setaside the dough in a fridge during 30min.
- Preheat the oven at 180°C.
- Roll out the pastry on a lightly floured surface.
- Line a tart tin (approx. 23cm diameter).
- Prick the base of the pastry with a fork.
- Cook in the oven at 180°C during 20min.
- Remove the baking beans/paper.
- Cook in the oven at 180°C during 5min.
- Setaside the preparation content on the workplan let cool.
Lemon Cream
- Wash the food processor bowl.
- Add 200 g of granulated sugar, 2 lemons only the yellow in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 10.
- Add 2 lemons, 3 eggs, 100 g of butter in the food processor bowl.
- Mix manual: 12:00min / 80°C / Speed 4.
- Pour the content of the food processor bowl in the preparation content.
- Pour the Lemon Cream into the cooled tart shell and spread evenly.
Meringue
- Wash the food processor bowl.
- Place the whisk.
- Add 3 eggs only white in the food processor bowl.
- Mix manual: 3:00min / 0°C / Speed 4.
- Add 150 g of granulated sugar gradually, 1 teaspoon(s) of lemon juice in the food processor bowl.
- Mix manual: 5:00min / 0°C / Speed 4.
- Transfer the content of the food processor bowl on the preparation content.
- Spoon or pipe the meringue onto the Lemon Cream, creating peaks.
- Use a kitchen blowtorch to lightly brown the meringue peaks, or place the tart under a hot grill for a short time, watching carefully to avoid burning.
- Allow to cool slightly before serving.
- Serve Cold.
