Steps

Dough Preparation

Add 300 g of flour, 200 g of fine semolina, 10 g of fresh baker's yeast, 300 g of water, 10 g of salt in the food processor bowl.
Mix knead: 5:00min / 0°C / Speed 1.
Transfer the content of the food processor bowl in a bowl cover with towel.
Lightly oil the bowl.
Setaside the dough in the bowl during 1h .

Filling Preparation

Wash the food processor bowl.
Peel, cut in four, and add 1 onion in the food processor bowl.
Wash, deseed, cut in four, and add 1 red pepper, 1 green pepper in the food processor bowl.
Add 2 g of clove of garlic in the food processor bowl.
Mix chop: 5sec / 0°C / Speed 5.
Add 20 g of olive oil in the food processor bowl.
Mix manual: 5:00min / 120°C / Speed 1.
Add 300 g of ground beef, 10 g of paprika, 5 g of ground cumin, 5 g of chili powder, 5 g of salt, 5 g of pepper, 1 g of fresh coriander in the food processor bowl.
Mix manual: 10:00min / 120°C / Speed 1 in inverse.
Transfer the content of the food processor bowl in the bowl let cool.

Assembly and Cooking

Divide the dough into equal pieces.
Roll each piece into a flat circle about 1/4 inch thick.
Place a portion of the filling in the center of half of the circles.
Top with the remaining circles and press the edges to seal.
Warm up the pan with an oil base during 5min.
Cook in the pan during 5min to 10min and turn as soon as the face is golden.
