  • 200 g Fine semolina
  • 10 g Fresh baker's yeast
  • 300 g Water
  • 15 g Salt
  • 1 Onion
  • 1 Red pepper
  • 1 Green pepper
  • 2 g Clove of garlic
  • 20 g Olive oil
  • 300 g Ground beef
  • 10 g Paprika
  • 5 g Ground cumin
  • 5 g Chili powder
  • 5 g Pepper
  • 1 g Fresh coriander

Steps

Dough Preparation

  1. Add 300 g of flour, 200 g of fine semolina, 10 g of fresh baker's yeast, 300 g of water, 10 g of salt in the food processor bowl.
  2. Mix knead: 5:00min / 0°C / Speed 1.
  3. Transfer the content of the food processor bowl in a bowl cover with towel.
  4. Lightly oil the bowl.
  5. Setaside the dough in the bowl during 1h .

Filling Preparation

  1. Wash the food processor bowl.
  2. Peel, cut in four, and add 1 onion in the food processor bowl.
  3. Wash, deseed, cut in four, and add 1 red pepper, 1 green pepper in the food processor bowl.
  4. Add 2 g of clove of garlic in the food processor bowl.
  5. Mix chop: 5sec / 0°C / Speed 5.
  6. Add 20 g of olive oil in the food processor bowl.
  7. Mix manual: 5:00min / 120°C / Speed 1.
  8. Add 300 g of ground beef, 10 g of paprika, 5 g of ground cumin, 5 g of chili powder, 5 g of salt, 5 g of pepper, 1 g of fresh coriander in the food processor bowl.
  9. Mix manual: 10:00min / 120°C / Speed 1 in inverse.
  10. Transfer the content of the food processor bowl in the bowl let cool.

Assembly and Cooking
