  • 500 g Blackberry
  • 150 g Granulated sugar
  • 150 g Water
  • 15 g Lemon juice

Steps

Blackberry Syrup

  1. Add 500 g of blackberry, 150 g of granulated sugar, 150 g of water in the food processor bowl.
  2. Mix manual: 15:00min / 100°C / Speed 1.
  3. Add 15 g of lemon juice in the food processor bowl.
  4. Mix manual: 10sec / 0°C / Speed 4.
  5. Transfer the content of the food processor bowl by using the spatula in a strainer.
  6. Strain the mixture through a fine-mesh sieve into a bowl, pressing firmly to extract as much liquid as possible. Discard the solids.
  7. Setaside the preparation content let cool.

Freezing

  1. Transfer the content of the preparation content in a freezer bag.
  2. Setaside the preparation content in a freezer during 4h .

Blackberry Sorbet

  1. Break the frozen Blackberry Syrup into large chunks.
  2. Transfer the content of the preparation content in the food processor bowl.
  3. Mix manual: 30sec / 0°C / Speed 6. Scrape the sides of the bowl with the spatula
  4. Mix manual: 20sec / 0°C / Speed 6.
  5. If a softer consistency is desired, blend for a further 10-20 seconds.

Serving

  1. Serve Immediately.
  2. Garnish with fresh Blackberries.
