Caramelized Quince Tart using a Cecotec

Ingredients

  • 150 g Flour
  • 125 g Salted butter
  • 50 g Water
  • 150 g Granulated sugar
  • 25 g Lemon juice
  • 800 g Quince

Steps

Make the pastry

  1. Add 150 g of flour, 75 g of salted butter in the food processor bowl.
  2. Mix manual: 20sec / 0°C / Speed 5.
  3. Add 50 g of water in the food processor bowl.
  4. Mix manual: 15sec / 0°C / Speed 4.
  5. Transfer the content of the food processor bowl in a cling film warp in cling wrap.
  6. Refrigerate for at least 30 minutes.

Caramelize the quinces

  1. Wash the food processor bowl.
  2. Add 150 g of granulated sugar, 50 g of salted butter in the food processor bowl.
  3. Mix manual: 8:00min / 120°C / Speed 1.
  4. Add 25 g of lemon juice in the food processor bowl.
  5. Peel, sliced, and add 800 g of quince in the food processor bowl.
  6. Mix manual: 25:00min / 100°C / Speed 1.

Assemble and bake

  1. Preheat the oven at 180°C.
  2. Roll out the chilled pastry on a lightly floured surface to a circle slightly larger than your tart pan.
  3. Transfer the content of the food processor bowl on a cake mold.
  4. Carefully place the pastry over the caramelized quinces, tucking the edges down inside the pan.
  5. Cook in the oven at 180°C.
  6. Let the tart cool slightly before inverting it onto a serving plate.
  7. Serve Warm.
