  • 15 g Fresh baker's yeast
  • 250 g Flour t55
  • 30 g Granulated sugar
  • 3 g Salt
  • 60 g Butter
  • 2 Dark chocolates
  • 1 Eggplant

Steps

Dough Preparation

  1. Add 120 g of milk, 15 g of fresh baker's yeast in the food processor bowl.
  2. Mix manual: 2:00min / 37°C / Speed 2.
  3. Add 250 g of flour t55, 30 g of granulated sugar, 3 g of salt in the food processor bowl.
  4. Mix knead: 3:00min / 0°C / Speed 1.
  5. Add 60 g of butter in the food processor bowl.
  6. Mix knead: 5:00min / 0°C / Speed 1.
  7. Transfer the content of the food processor bowl on a workplan.
  8. Form a ball.
  9. Wrap the dough in cling film.
  10. Setaside the dough in a fridge during 2h .

Shaping and Filling

  1. Roll out the dough on a lightly floured surface into a large rectangle.
  2. Cut the rectangle into smaller rectangles.
  3. Place 2 dark chocolates on the dough.
  4. Place Dark Chocolate sticks on one end of each rectangle.
  5. Roll up the dough around the chocolate to form a pain au chocolat.

Baking

  1. Place the content of the workplan on a baking tray.
  2. Place the pains au chocolat on a baking sheet lined with baking paper.
  3. Brush 1 eggplant on the dough.
  4. Preheat the oven at 180°C.
  5. Cook in the oven at 180°C during 15min.
  6. Bake for 15-20 minutes, or until golden brown.
  7. Let cool slightly before serving.
  8. Serve Warm.
