  • 65 g Butter
  • 50 g Water
  • 15 g Bitter cocoa
  • 1 Teaspoon(s) Granulated sugar
  • 1 Pinch(es) Salt
  • 3 Eggs
  • 130 g Granulated sugar
  • 50 g Cornflour (maïzena)
  • 150 g Fresh liquid cream
  • 150 g Dark chocolate
  • 500 g Milk

Steps

  1. Preheat the oven at 180°C.
  2. Add 135 g of flour, 65 g of butter, 50 g of water, 15 g of bitter cocoa, 1 teaspoon(s) of granulated sugar, 1 pinch(es) of salt in the food processor bowl.
  3. Mix manual: 1:00min / 0°C / Speed 3.
  4. Clear out, film, and store in the fridge
  5. Wash and dry the bowl of the food processor.
  6. Add 3 eggs, 130 g of granulated sugar, 50 g of cornflour (maïzena), 150 g of fresh liquid cream, 150 g of dark chocolate in the food processor bowl.
  7. Mix manual: 30sec / 0°C / Speed 7.
  8. Add 500 g of milk in the food processor bowl.
  9. Mix manual: 12:00min / 90°C / Speed 4.
  10. Let it cool in the mixing bowl.
  11. Roll out the dough and line a lightly buttered 20 cm diameter tart pan to create a thick flan.
  12. Pour the cooled flan. Smooth the top with a spatula.
  13. Cook in the oven at 180°C during 35min.
  14. Let it cool before tasting.
