  • 5 g Bitter cocoa

  3. Scrape down the sides of the bowl with a spatula.

Egg Mixture

  2. Place the whisk.
  3. Add 1 pinch(es) of salt in the food processor bowl.
  4. Mix manual: 4:00min / 0°C / Speed 4.
  5. Remove the whisk.
  6. Setaside the preparation content in a bowl.
  7. Add 3 eggs only the yellow in the food processor bowl.
  8. Mix manual: 20sec / 0°C / Speed 3.
  9. Transfer the content of the bowl in the food processor bowl.
  10. Gently fold the egg whites into the chocolate mixture.

Assembling the Mousse

  1. Divide the content of the food processor bowl in the ramekin.
  2. Setaside the preparation content in a fridge during 2h .
  3. Sprinkle 5 g of bitter cocoa on the preparation content.
  4. Garnish with broken pieces of Dark Chocolate.
