Ingredients
- 200 g Dark chocolate
- 3 Eggs
- 1 Pinch(es) Salt
- 5 g Bitter cocoa
Steps
Chocolate Base
- Add 200 g of dark chocolate in the food processor bowl.
- Mix manual: 5:00min / 50°C / Speed 2.
- Scrape down the sides of the bowl with a spatula.
Egg Mixture
- Add 3 eggs only white in the food processor bowl.
- Place the whisk.
- Add 1 pinch(es) of salt in the food processor bowl.
- Mix manual: 4:00min / 0°C / Speed 4.
- Remove the whisk.
- Setaside the preparation content in a bowl.
- Add 3 eggs only the yellow in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 3.
- Transfer the content of the bowl in the food processor bowl.
- Gently fold the egg whites into the chocolate mixture.
Assembling the Mousse
- Divide the content of the food processor bowl in the ramekin.
- Setaside the preparation content in a fridge during 2h .
- Sprinkle 5 g of bitter cocoa on the preparation content.
- Garnish with broken pieces of Dark Chocolate.
- Serve Cold.
