  • 20 g Mint
  • 200 g Water
  • 100 g Granulated sugar
  • 4 Limes
  • 50 g White rum
  • 300 g Ice cube

Steps

Mint Infusion

  1. Add 20 g of mint, 200 g of water in the food processor bowl.
  2. Mix manual: 5:00min / 100°C / Speed 1.
  3. Let the mint infuse for 10 minutes.
  4. Transfer the content of the food processor bowl by using the spatula in a bowl.
  5. Strain the mint water through a fine-mesh sieve, discarding the mint leaves.
  6. Rinse the food processor bowl.

Granita Base

  1. Add 100 g of granulated sugar in the food processor bowl.
  2. Transfer the content of the bowl in the food processor bowl.
  3. Mix manual: 10sec / 0°C / Speed 3.
  4. Add 4 limes in the food processor bowl.
  5. Juice the limes.
  6. Add 50 g of white rum in the food processor bowl.
  7. Mix manual: 10sec / 0°C / Speed 3.
  8. Transfer the content of the food processor bowl in a container.
  9. Setaside the preparation content in a freezer during 3h .
  10. Scrape with a fork every 30 minutes to create a crystalline texture.

Final Preparation

  1. Once the granita is fully frozen, break it into chunks.
  2. Add 300 g of ice cube in the food processor bowl.
  3. Transfer the content of the container in the food processor bowl.
  4. Mix manual: 20sec / 0°C / Speed 6.
  5. Serve Immediately.
  6. Garnish with Lime wedges.
