- 550 g Water
- 15 g Coarse salt
- 600 g Potato
- 300 g Fish fillet
- 60 g Butter
- 60 g Milk
- 150 g Goat cheese
- 1 Pinch(es) Salt
- 1 Pinch(es) Pepper
- 1 Clove of garlic
- 6 g Fresh parsley
Steps
- Add 550 g of water, 15 g of coarse salt in the food processor bowl.
- Place the vapor kit.
- Cut in pieces, and add 600 g of potato in the cooking basket.
- Add 300 g of fish fillet
- Mix steam: 25:00min / 120°C / Speed .
- In the meantime, butter a baking dish and set it aside.
- Remove the cooking basket.
- Wash the food processor bowl.
- Add 60 g of butter, 60 g of milk in the food processor bowl.
- Add the cooked potatoes.
- Mix manual: 3:00min / 90°C / Speed 2.
- Transfer to the prepared baking dish.
- Put the cooked fish.
- Add 150 g of goat cheese in the food processor bowl.
- Add 1 pinch(es) of salt, 1 pinch(es) of pepper
- Mix manual: 20sec / 0°C / Speed in inverse.
- Adjust the seasoning if needed. Spread the mixture over the puree and set aside. Clean the bowl.
- Preheat the oven at 200°C.
- Add 1 clove of garlic in the food processor bowl.
- Cut the head, and add 6 g of fresh parsley in the food processor bowl.
- Add 50 g homemade breadcrumbs in the food processor bowl.
- Mix manual: 8sec / 0°C / Speed 6. Scrape the sides of the bowl with the spatula
- Spread the breadcrumbs over the fish and cheese mixture and drizzle with olive oil.
- Cook in the oven at 200°C during 35min.
- Serve very hot.
