Ingredients
- 150 g Butter
- 300 g Flour t55
- 75 g Icing sugar
- 1 Egg
- 1 Teaspoon(s) Vanilla extract
- 5 g Raspberry jam
Steps
Dough
- Add 150 g of butter, 300 g of flour t55, 75 g of icing sugar, 1 egg, 1 teaspoon(s) of vanilla extract in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4. The mixture should be homogeneous, if it is not the case scrape the edges of the bowl with the spatula and mix again
- Transfer the content of the food processor bowl on a cling film warp in cling wrap.
- Setaside the dough in a fridge during 30min.
Cookies
- Preheat the oven at 180°C.
- Roll out the chilled dough to about 3-4 mm thickness on a lightly floured surface.
- Use star-shaped cookie cutters to cut out cookies. Make an even number.
- For half of the cookies, use a smaller star-shaped cutter to cut out the centers.
- Place the content of the dough on a baking tray.
- Cook in the oven at 180°C during 8min.
- Let the cookies cool completely on the baking sheets.
Assembly
- Warm up the Raspberry Jam slightly to make it more spreadable.
- Spread 5 g of raspberry jam on a plate.
- Spread a small amount of Raspberry Jam on the flat side of the whole star cookies.
- Top with the star cookies that have the centers cut out.
- Gently press the cookies together.
- Dust with Icing Sugar if desired.
- Serve Immediately.
