Ingredients
- 250 g Flour t55
- 125 g Salted butter
- 75 g Water
- 1 Eggplant
- 200 g Whipping cream
- 100 g Emmental
- 100 g Ham
- 50 g Fresh spinach
- 1 Teaspoon(s) Ground nutmeg
- 1 g Salt
- 1 g Pepper
Steps
Dough
- Add 250 g of flour t55, 125 g of salted butter in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 6.
- Add 75 g of water, 1 eggplant in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl on a workplan.
- Flatten the dough into a disc.
- Wrap in cling film.
- Setaside the dough in a fridge during 30min.
Filling
- Wash the food processor bowl.
- Add 200 g of whipping cream, 100 g of emmental in the food processor bowl.
- Mix manual: 5:00min / 90°C / Speed 2.
- Add 100 g of ham, 50 g of fresh spinach, 1 teaspoon(s) of ground nutmeg, 1 g of salt adjust according to the tastes, 1 g of pepper adjust according to the tastes in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 3.
- Setaside the preparation content in a bowl.
Assembling and Baking
- Preheat the oven at 180°C.
- Roll out half of the dough on a lightly floured surface.
- Line a tart pan.
- Pour the content of the bowl in a baking dish.
- Roll out the remaining dough and cut into desired shapes (e.g., diamonds and leaves).
- Arrange the dough shapes on top of the tart.
- Cook in the oven at 180°C during 30min.
- Bake for 30-40 minutes, or until the crust is golden brown and the filling is set.
- Let cool slightly before serving.
- Serve Warm.
