Turkish Kanafeh using a Thermomix

Ingredients

  • 500 g Kataifi filo
  • 200 g Butter
  • 150 g Water
  • 300 g Granulated sugar
  • 15 g Lemon juice
  • 250 g Grated mozzarella
  • 50 g Shard of roasted pistachio
  • 1 Vanilla ice cream

Steps

Kataifi Mixture

  1. Add 500 g of kataifi filo in the food processor bowl.
  2. Mix manual: 5sec / 0°C / Speed 5.
  3. Transfer the content of the food processor bowl in a bowl.
  4. Wash the food processor bowl.
  5. Add 200 g of butter in the bowl.
  6. Mix well to ensure all strands are coated.
  7. Setaside the preparation content on a workplan.

Syrup

  1. Add 150 g of water in a saucepan.
  2. Add 300 g of granulated sugar in the saucepan.
  3. Boil the saucepan.
  4. Cook in the saucepan during 10min.
  5. Add 15 g of lemon juice in the saucepan.
  6. Setaside the preparation content on the workplan let cool.

Cooking

  1. Preheat the oven at 180°C.
  2. Grease a round baking dish with Butter.
  3. Place half the content of the bowl in a baking dish.
  4. Spread half of the Kataifi mixture evenly in the prepared dish. Press firmly to create a base.
  5. Sprinkle 250 g of grated mozzarella over the baking dish.
  6. Sprinkle Mozzarella evenly over the Kataifi base, avoiding the edges.
  7. Transfer the content of the bowl in the baking dish.
  8. Cover with the remaining Kataifi mixture, pressing gently to compact it.
  9. Cook in the oven at 180°C during 20min to 25min.
  10. Cook in the oven at 180°C during 5min.

Finishing

  1. Pour the content of the saucepan over the baking dish.
  2. Remove from oven and immediately pour the cooled syrup evenly over the hot Künefe.
  3. Let it soak for a few minutes, allowing the syrup to be absorbed.
  4. Sprinkle 50 g of shard of roasted pistachio on the baking dish.
  5. Place 1 vanilla ice cream on a plate.
  6. Serve Immediately.
