  • 100 g Red pepper
  • 300 g Eggplant
  • 200 g Tomato
  • 1 Strand(s) Thyme
  • 1 Sheet(s) Bay leaf

  • 20 g Olive oil
  • 5 Strand(s) Fresh basil
  • 10 Sheet(s) Mint
  • 10 Strand(s) Fresh chive

Steps

  1. Cut in two, and add 100 g of onion in the food processor bowl.
  2. Cut in pieces, and add 100 g of red pepper in the food processor bowl.
  3. Cut into cubes, and add 300 g of eggplant in the food processor bowl.
  4. Mix manual: 5sec / 0°C / Speed 5. Scrape the sides of the bowl with the spatula
  5. Cut into cubes, and add 200 g of tomato in the food processor bowl.
  6. Add 1 strand(s) of thyme, 1 sheet(s) of bay leaf, 1 pinch(es) of salt adjust according to the tastes, 1 pinch(es) of pepper adjust according to the tastes, 20 g of olive oil in the food processor bowl.
  7. Mix manual: 10:00min / 100°C / Speed in inverse.
  8. Drain the preparation in the cooking basket, making sure to keep the cooking juice. Save it for making a sauce base, for example.
  9. Transfer the content of the food processor bowl in a container.
  10. Chop, and add 5 strand(s) of fresh basil, 10 sheet(s) of mint, 10 strand(s) of fresh chive in the container.
  11. Mix using a spatula. Set aside.
  12. Preheat the oven at 180°C.
  13. Line a baking tray with parchment paper and set aside.
  14. Add 500 g perfect shortcrust pastry on a workplan.
  15. Cut into cubes, and add 100 g of goat cheese on the workplan.
  16. Using a rolling pin, roll out the shortcrust pastry thinly on a floured work surface. With a cookie cutter (Ø 12-14 cm), cut out pastry discs.
  17. Fill half of the discs with a generous teaspoon of vegetable filling, add a few cubes of goat cheese, then fold the unfilled part of the dough over the filling.
  18. Close the slippers by securely welding the edges, then place them on the prepared baking sheet. Bake them in the oven.
  19. Cook in the oven at 180°C during 20min to 25min.
