  • 20 g Fresh baker's yeast
  • 500 g Flour t55
  • 30 g Olive oil
  • 10 g Salt
  • 10 g Granulated sugar
  • 50 g Grated emmental
  • 10 g Fresh parsley

Steps

Dough

  1. Add 1 g of water, 20 g of fresh baker's yeast in the food processor bowl.
  2. Mix manual: 2:00min / 37°C / Speed 2.
  3. Add 500 g of flour t55, 30 g of olive oil, 10 g of salt, 10 g of granulated sugar in the food processor bowl.
  4. Mix knead: 3:00min / 0°C / Speed 3.
  5. Transfer the content of the food processor bowl in a bowl.
  6. Wash the food processor bowl.
  7. Lightly oil the bowl.
  8. Setaside the dough in the bowl cover with towel during 1h .

Shaping & Filling

  1. Preheat the oven at 180°C.
  2. Line a baking sheet with baking paper.
  3. Divide the dough into two parts, one twice the size of the other.
  4. Roll the larger part into a long rectangle and place on the prepared baking sheet.
  5. Roll the remaining dough into small balls.
  6. Attach the balls to the base forming a line of bulges along the bread.

Baking

  1. Sprinkle 50 g of grated emmental on the dough.
  2. Chop, and sprinkle 10 g of fresh parsley over the dough.
  3. Cook in the oven at 180°C during 20min.
  4. Bake for 20-25 minutes, or until golden brown.
  5. Let cool slightly before serving.
  6. Serve Warm.
