  • 80 g Granulated sugar
  • 100 g Milk
  • 100 g Butter
  • 3 Eggs
  • 1 Pinch(es) Salt
  • 100 g Dark chocolate
  • 50 g Chocolate chip

Steps

Dough

  1. Add 500 g of flour t55, 20 g of fresh baker's yeast in the food processor bowl.
  2. Mix manual: 2:00min / 0°C / Speed 3.
  3. Add 80 g of granulated sugar, 100 g of milk, 100 g of butter, 2 eggs, 1 pinch(es) of salt in the food processor bowl.
  4. Mix knead: 3:00min / 0°C / Speed 1.
  5. Transfer the content of the food processor bowl in a mixing bowl.
  6. Setaside the dough in the mixing bowl cover with towel during 1h .

Shaping and Baking

  1. Preheat the oven at 180°C.
  2. Line a baking sheet with baking paper.
  3. Punch down the dough.
  4. Divide it into equal portions (about 8-10).
  5. Shape each portion into a small man figure.
  6. Place the content of the dough on a baking tray.
  7. Brush 1 egg with a pastry brush.
  8. Cook on the oven at 180°C during 15min.
  9. Bake for 15-20 minutes, or until golden brown.
  10. Let the mannele cool completely.

Decoration

  1. Add 100 g of dark chocolate in the food processor bowl.
  2. Mix manual: 3:00min / 50°C / Speed 2.
  3. Transfer the content of the food processor bowl in a piping bag.
  4. Decorate the mannele with the melted Dark Chocolate to create facial features, arms, a belt, and leg details.
  5. Place 50 g of chocolate chip on the dough.
  6. Let the chocolate set before serving.
