  • 30 g Olive oil
  • 400 g Diced tomato pulp
  • 100 g Tomato puree
  • 5 g Basil
  • 2 g Salt
  • 1 g Pepper
  • 50 g Mozzarella
  • 20 g Parmesan cheese

Steps

Tomato Sauce

  1. Add 2 cloves of garlic in the food processor bowl.
  2. Mix chop: 3sec / 0°C / Speed 5.
  3. Add 30 g of olive oil in the food processor bowl.
  4. Mix manual: 3:00min / 120°C / Speed 1.
  5. Add 400 g of diced tomato pulp, 100 g of tomato puree, 5 g of basil, 2 g of salt, 1 g of pepper in the food processor bowl.
  6. Mix manual: 20:00min / 100°C / Speed 2.
  7. Transfer the content of the food processor bowl in a bowl.
  8. Setaside the preparation content.

Eggplant

  1. Slice eggplant into 1/4-inch thick slices.
  2. Brush each slice with olive oil, salt, and pepper.
  3. Pan fry the pan with an oil base and each side.
  4. Setaside the preparation content.

Assembly

  1. Preheat the oven at 180°C.
  2. Spread a thin layer of Tomato Sauce on the bottom of a rectangular baking dish.
  3. Layer Eggplant slices over the sauce, overlapping slightly.
  4. Spread another layer of Tomato Sauce over the Eggplant.
  5. Sprinkle 50 g of mozzarella, 20 g of parmesan cheese over the preparation content.
  6. Repeat layers of Eggplant, Tomato Sauce, and cheeses until all ingredients are used, finishing with a layer of cheese on top.
  7. Cook in the oven during 20min.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and lightly browned.
  9. Let it cool for a few minutes before serving.
