  • 320 g Penne
  • 100 g Whipping cream
  • 50 g Parmesan cheese
  • 5 g Fresh parsley

Steps

Sautéing Aromatics and Mushrooms

  1. Add 1 shallot, 1 clove of garlic in the food processor bowl.
  2. Mix chop: 3sec / 0°C / Speed 5.
  3. Add 10 g of olive oil, 30 g of butter in the food processor bowl.
  4. Mix manual: 3:00min / 120°C / Speed 1.
  5. Add 250 g of porcini mushroom, 1 pinch(es) of salt, 1 pinch(es) of pepper, 1 bay leaf in the food processor bowl.
  6. Mix manual: 10:00min / 120°C / Speed 1 in inverse.
  7. Remove the content of the food processor bowl on a plate.
  8. Remove the bay leaf.

Cooking the Pasta

  1. Cook Penne according to package directions in a pot of boiling salted water, until al dente.
  2. Drain, reserve 50 ml of the pasta water.

Finishing the Dish

  1. Rinse the food processor bowl.
  2. Transfer the content of the plate in the food processor bowl.
  3. Add 320 g of penne, 100 g of whipping cream in the food processor bowl.
  4. Mix manual: 2:00min / 90°C / Speed 2 in inverse.
  5. Adding some of the reserved pasta water if needed to adjust the consistency of the sauce.
  6. Grate, and add 50 g of parmesan cheese in the food processor bowl.
  7. Add 5 g of fresh parsley in the food processor bowl.
  8. Mix manual: 30sec / 0°C / Speed 3.
  9. Serve Hot.
  10. Serve immediately, garnished with additional Grated Parmesan Cheese and Fresh Parsley, if desired.
