- 200 g Stale bread
- 650 g Milk
- 300 g Ground beef
- 1 Egg
- 20 g Fresh parsley
- 1 Teaspoon(s) Garlic powder
- 8 g Salt
- 2 g Pepper
- 100 g Breadcrumb
- 50 g Butter
- 200 g White onion
- 30 g Flour t55
- 1 g White pepper
- 1 Pinch(es) Ground nutmeg
Steps
Croquettes
- Add 200 g of stale bread in a bowl.
- Add 150 g of milk in the bowl.
- Soak the stale bread in milk until softened
- Transfer the content of the bowl in the food processor bowl.
- Squeeze out excess milk.
- Add 300 g of ground beef, 1 egg, 20 g of fresh parsley, 1 teaspoon(s) of garlic powder, 5 g of salt, 2 g of pepper in the food processor bowl.
- Mix manual: 15sec / 0°C / Speed 4.
- Shape the mixture into elongated croquettes
- Coat 100 g of breadcrumb on a workplan.
- Roll each croquette in breadcrumbs.
- Cook in the oven with an oil base.
- Fry the croquettes until golden brown and crispy on all sides.
- Setaside the preparation content on a plate.
Soubise Sauce
- Wash the food processor bowl.
- Add 50 g of butter, 200 g of white onion in the food processor bowl.
- Mix chop: 5sec / 0°C / Speed 5.
- Mix manual: 5:00min / 120°C / Speed 1.
- Add 30 g of flour t55 in the food processor bowl.
- Mix manual: 2:00min / 100°C / Speed 1.
- Add 500 g of milk, 3 g of salt, 1 g of white pepper, 1 pinch(es) of ground nutmeg in the food processor bowl.
- Mix manual: 15:00min / 90°C / Speed 3.
- Mix manual: 20sec / 0°C / Speed 7. The mixture should be homogeneous, if it is not the case scrape the edges of the bowl with the spatula and mix again
- Transfer the content of the food processor bowl in a saucepan.
- Serve Hot.
- Serve the fried croquettes hot, topped with the Soubise Sauce
